Ingredients

- 3 ounces spinach
- 1 egg, beaten
- salt
- pepper
- cooking oil
- 1/2 tablespoon soy sauce
- 1/2 tablespoon sake
Recipe
- 1 Blanche spinach in boiling salted water. Squeeze out the water and chop. Stir the salt and pepper into the beaten egg.
- 2 With ½ T oil in the pan, make a small omelet with the egg. Remove.
- 3 Add the remaining oil to the pan. Stir in the spinach. Add the soy sauce and sake.
