Ruth's Caramels

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 cup butter
  • 16 ounces brown sugar
  • 1/8 teaspoon salt
  • 1 cup light corn syrup
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract

Recipe

  • 1 In a heavy saucepan, melt butter over low heat, add sugar and salt, stirring well.
  • 2 Stir in corn syrup.
  • 3 Slowly add condensed milk, stirring constantly.
  • 4 Cook and stir over medium heat 12 to 15 minutes or until mixture reaches the firm ball stage, 244 to 249 degrees on a candy thermometer.
  • 5 Remove from heat, stir in vanilla.
  • 6 Pour into a greased 9x9 inch pan.
  • 7 Cool and cut into squares. Wrap in cut out squares of wax paper, twisting the ends.
