Steamed Mussels With Garlic (liv Rockefeller)

Ingredients

- 4 tablespoons unsalted butter
- 1 medium onion, minced
- 4 garlic cloves, minced
- 1/4 teaspoon crushed red pepper flakes
- 1 1/2 cups dry wine
- 6 lbs mussels, scrubbed, debearded
- 1 cup water
Recipe
- 1 melt the butter in a large, heavy saucepan.
- 2 add the onion and cook over moderate heat, stirring, until just softened, about 2 minutes.
- 3 add the garlic and crushed red pepper flakes and cook until fragrant, about 1 minute.
- 4 add wine and bring to a boil.
- 5 add the mussels and about a cup of water.
- 6 cover and cook over high heat, stirring occasionally, until the mussels open, 8-10 minutes.
- 7 discard any mussels that don't open.
- 8 spoon the mussels and broth into bowls and serve.
