Quinoa And Chickpea Wraps

Ingredients

  • Servings: 2
  • 1 tablespoon chopped fresh mint
  • 1/8 teaspoon fine sea salt
  • 1/3 cup plain greek yogurt
  • 16 inches whole wheat tortillas
  • 1 cup rinsed and drained chickpeas, mashed with a fork
  • 3/4 cup cooked quinoa, cooled
  • 1/4 cup golden raisin, chopped
  • 1 tablespoon lemon juice

Recipe

  • 1 in small bowl, whisk together mint, salt and yogurt.
  • 2 spread tortillas with yogurt mixture. top with chickpeas, quinoa and raisins. sprinkle with lemon juice. roll up like burritos.
