Ingredients

- 1 tablespoon chopped fresh mint
- 1/8 teaspoon fine sea salt
- 1/3 cup plain greek yogurt
- 16 inches whole wheat tortillas
- 1 cup rinsed and drained chickpeas, mashed with a fork
- 3/4 cup cooked quinoa, cooled
- 1/4 cup golden raisin, chopped
- 1 tablespoon lemon juice
Recipe
- 1 in small bowl, whisk together mint, salt and yogurt.
- 2 spread tortillas with yogurt mixture. top with chickpeas, quinoa and raisins. sprinkle with lemon juice. roll up like burritos.
