Spiced Apple Chutney

Ingredients
- 1 lb onion, minced
- 5 lbs apples, peeled and chopped
- 1 1/2 cups water
- 1 1/4 teaspoons ground ginger
- 2 teaspoons coarse salt
- 1 1/4 tablespoons dry mustard
- 10 cloves
- 8 whole allspice
- 2 cups vinegar
- 2 1/2 cups brown sugar
Recipe
- 1 mix together the onions, apples, water, ginger, salt and mustard in a large saucepan.
- 2 put the cloves and allspice into a muslin bag and add to the saucepan.
- 3 bring to a boil. reduce heat and simmer for 45 minutes.
- 4 stir in the vinegar and sugar and simmer uncovered for 1 1/2 hours.
- 5 remove the muslin bag and when cool, pour the chutney into sterilized jars and seal.
- 6 may be eaten in a few days.
