Soprano's Lamb Chops With Vinegar Peppers

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 4 lamb chops, 1 inch thick
  • salt & fresh ground pepper
  • 2 cloves garlic, minced
  • 2 cups sliced mild pickled peppers (plus 2 t. juice)
  • 3 -5 hot pepperoncini peppers (optional)

Recipe

  • 1 heat the oil in a large skillet over medium high heat.
  • 2 when hot, pat chops dry, sprinkle with salt and pepper and add to skillet.
  • 3 cook chops, turning once for about 5 minutes on each side, or until brown.
  • 4 lower the heat to medium and scatter garlic around chops.
  • 5 cover and cook 5 to 8 minutes more.
  • 6 check for doneness.
  • 7 remove to a plate and keep warm.
  • 8 add the peppers and juice to the skillet.
  • 9 cook, stirring for 1-2 minutes or until the peppers are heated through.
  • 10 spoon the peppers over chops and serve immediately.
