Rum And Raisin Ice Cream With A 'twist

Ingredients

  • Servings: 6
  • 3/4 cup raisins, chopped
  • 1/4 cup dark rum
  • 1 1/2 tablespoons freshly-squeezed lime juice
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1 cup full-fat evaporated milk, mixed with
  • 3/4 cup water
  • 1/2 cup liquid honey, orange blossom is nice

Recipe

  • 1 combine raisins, rum, lime juice and vanilla extract in small bowl; cover and stand overnight.
  • 2 place all ingredients in a large bowl and mix thoroughly; pour into an ice cream maker and follow manufacturer’s instructions.
