Seared Capsicum Tapas

Ingredients
- 2 large red capsicums
- 4 large slice prosciutto
- 200 g goat cheese or 200 g danish feta cheese
- 1 bunch basil
- 1 tablespoon cracked black pepper
- 1/4 cup olive oil
- 1/2 tablespoon balsamic vinegar
- 1 garlic clove, crushed
- 1/2 cup parmesan cheese
- 1/2 cup chopped green olives
Recipe
- 1 preheat oven to 200°c.
- 2 mix olive oil, balsamic vinegar and crushed garlic in a large mixing bowl.
- 3 cut red capsicum into quarters and clean out seeds.
- 4 toss capsicum pieces in the vinaigrette.
- 5 bbq capsicum pieces on a griddle.
- 6 drain excess oil off seared capsicum by placing them on paper towel.
- 7 place capsicum outer side down on a baking tray lined with baking paper.
- 8 lay eight basil leaves in the hollow of each capsicum piece.
- 9 place a thick slice of goats cheese on top.
- 10 for half the pieces, wrap in prosciutto, securing with a toothpick.
- 11 for the other half, sprinkle green olives on top, followed by parmesan cheese.
- 12 bake in oven for 15 - 20 minutes.
