Ingredients

- 4 lamb chops
- 1 (6 ounce) package long grain and wild rice blend
- 1 1/3 cups water
- 1 (14 1/2 ounce) can whole tomatoes, broken up
- 4 scallions, sliced
- 1/3 cup golden raisin
Recipe
- 1 in a large skillet, cook lamb chops over medium high heat, turning once until browned on both sides, about 5 minutes. remove to a plate.
- 2 add rice and seasonings from mix to skillet, along with water, tomatoes and their liquids, scallions and raisins. mix well.
- 3 heat to boiling. reduce heat and place lamb chops on top of the rice. cover and simmer for 45 minutes or until rice is cooked.
