Ski Slope Soup

Total Time: 1 hr 49 mins Preparation Time: 29 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 8
  • 1 lb bulk sausage
  • 2 (15 ounce) cans kidney beans
  • 1 (14 1/2 ounce) can tomatoes
  • 1 large onion, chopped
  • 1 quart water
  • 1/8 teaspoon seasoning salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 1/8 teaspoon pepper
  • 1 cup potato, peeled and diced

Recipe

  • 1 brown sausage and drain well.
  • 2 combine all ingredients in a 4 quart saucepan or dutch oven.
  • 3 cover and simmer for 1 hour.
  • 4 add potatoes and cook another 20 minutes.
  • 5 remove and discard bay leaves.
  • 6 beat soup with an electric mixer until all ingredients are well shredded, about 3 minutes.
  • 7 serve.
