Ingredients

- 4 large eggs
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 3 tablespoons rum
- 1/4 cup marmalade
- 1/2 cup sultana raisin
- 2 cups milk
- 1 pinch salt
- icing sugar
Recipe
- 1 preheat oven to 350*f.
- 2 butter a 1 3/4-inch deep baking dish, 11 3/4 x 7 1/2 inch (30 x 19 cm) in size.
- 3 place eggs and sugar in bowl, beat together.
- 4 add flour and salt, beat to incorporate.
- 5 add rum, marmalade and raisins, beat well.
- 6 pour in milk and beat to incorporate.
- 7 pour batter into baking dish and bake for 50 to 55 minutes or until golden brown.
- 8 let cool in baking dish.
- 9 cut into squares, and sprinkle with icing sugar.
- 10 serve with maple syrup if desired.
