Stir-fried Spinach With Garlic

Total Time: 11 mins Preparation Time: 5 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 750 g fresh spinach
  • 1 tablespoon oil
  • 1 tablespoon finely chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon sugar

Recipe

  • 1 wash the spinach thoroughly.
  • 2 remove all stems leaving just the leaves.
  • 3 heat the wok (or large frying pan) until it is very hot.
  • 4 add the oil.
  • 5 when the oil it is very hot and slightly smoking, add the garlic and salt.
  • 6 stir-fry both for 10 seconds.
  • 7 add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
  • 8 when the spinach has wilted to about one-third of its original size, add the sugar.
  • 9 continue to stir-fry for another 4 minutes.
  • 10 transfer to a plate and pour off any excess liquid.
  • 11 serve hot or cold.
