Steamed Mussels With Garlic (liv Rockefeller)

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 tablespoons unsalted butter
  • 1 medium onion, minced
  • 4 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups dry wine
  • 6 lbs mussels, scrubbed, debearded
  • 1 cup water

Recipe

  • 1 melt the butter in a large, heavy saucepan.
  • 2 add the onion and cook over moderate heat, stirring, until just softened, about 2 minutes.
  • 3 add the garlic and crushed red pepper flakes and cook until fragrant, about 1 minute.
  • 4 add wine and bring to a boil.
  • 5 add the mussels and about a cup of water.
  • 6 cover and cook over high heat, stirring occasionally, until the mussels open, 8-10 minutes.
  • 7 discard any mussels that don't open.
  • 8 spoon the mussels and broth into bowls and serve.
