Roasted Carrots And Dukkah

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 teaspoons cumin seeds, toasted
  • 2 teaspoons coriander seeds, toasted
  • 1/2 teaspoon flaky sea salt
  • 2 teaspoons sesame seeds, toasted
  • 50 g hazelnuts, roasted, skin removed
  • 1 kgs carrot, washed and halved
  • 1 tablespoon olive oil
  • sea salt

Recipe

  • 1 pound cumin and coriander seeds with the salt in a mortar to a powder.
  • 2 add sesame seeds and hazelnuts.
  • 3 continue to pound till a coarse crumb.
  • 4 preheat oven to 200°c.
  • 5 toss carrots and oil together, season with salt.
  • 6 place on lined baking tray.
  • 7 roast for 1 hour till tender.
  • 8 place in serving dish.
  • 9 drizzle with a little olive oil and sprinkle with dukkah.
