- 6 medium carrots
- 3 teaspoons olive oil
- 2 tablespoons chopped fresh herbs (dill or basil)
- salt
Recipe
- 1 peel carrots. cut into strips 3 inches long and ½ inch wide.
- 2 in a large bowl combine carrots, olive oil and herbs.
- 3 in a baking pan, spread carrots in a single layer.
- 4 roast, uncovered, in a 475* oven for 10 minutes, or until just tender.
- 5 sprinkle with salt.
