Pineapple Mango Chutney

Ingredients

  • Servings: 4
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/2 cup peeled, diced cucumber
  • 1/3 cup diced red bell pepper
  • 2 limes, juiced
  • 3 tablespoons minced green onion
  • 1 jalapeno pepper, seeded and minced
  • 1 teaspoon minced fresh mint
  • salt to taste

    Preparation Time: 20 mins Ready Time: 1 hr 20 mins

  • mix pineapple, mango, cucumber, red bell pepper, lime juice, green onion, jalapeno pepper, mint, and salt in a bowl. chill in refrigerator for about 1 hour before serving.

Skat's Monday Pizza Loaf

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 1 fresh pizza dough (, i use s'kat's easy pizza dough, storebought okay)
  • 1 egg, lightly beaten
  • 3 tablespoons fresh tomato sauce (, i use andrea's)
  • 3 cloves garlic, minced
  • 2 ounces sliced buffalo mozzarella, well drained
  • 12 slices pepperoni
  • 5 leaves fresh basil, crumbled

Recipe

  • 1 preheat oven to 375.
  • 2 place pepperonis on tinfoil in oven and bake for about 5 minutes, or until grease begins to come up.
  • 3 remove, drain, and pat dry.
  • 4 roll out dough into a rectangular shape.
  • 5 brush gently with egg.
  • 6 layer fresh tomato sauce, garlic, mozzarella, pepperoni, and basil onto dough.
  • 7 roll dough jelly-roll style, place onto baking stone and bake 35-40 minutes.
  • 8 remove and let cool 5 minutes.
  • 9 slice and serve.
  • 10 variations: saute onions or scallions on stove top and add to filling.
  • 11 additionally, add mushrooms, pepperoncinis, tomatoes, or kalamata olives.

Sizzling Steak And Onions, (vietnam)

Ingredients

  • Servings: 6
  • 675 g tenderloin or 675 g steak fillets, cut into 3/4 inch cubes
  • salt
  • 1/2 teaspoon sugar
  • black pepper, coarsely crushed (i use 1 1/2 tsp)
  • 3 cloves garlic, peeled and crushed
  • 1 inch gingerroot, peeled and crushed
  • 1 stalk fresh lemongrass, chopped (6 inches of) or 1 tablespoon dried lemon grass, soaked in warm water for an hour and drained or 1 tablespoon grated fresh lemon rind
  • 3 tablespoons vegetable oil
  • 1 large onion, peeled and cut into 3/4 inch cubes

Recipe

  • 1 combine the meat,salt, sugar, garlic, ginger, lemon grass/ lemon rind, black pepper in a bowl.
  • 2 rub the spices into the meat.
  • 3 marinate for 1 hour atleast.
  • 4 heat 2 tblsp oil in a cast iron pan till very hot (on high).
  • 5 add the onion and saute briefly till slightly brown but limp (for abt a min) remove and sprinkle a little salt on them (i omit this as i do not like too much salt and dh then adds some to his plate) heat pan again with the remaining oil in it.
  • 6 again when very hot put in the meat cubes in a single layer and cook on both sides (if you like it well cooked reduce heat to cook some more as the meat should not burn) serve with the onions on top.

Sizzling Scallop Salad

Ingredients

  • Servings: 4
  • 2 lbs fresh sea scallops, drained
  • 2 garlic cloves, minced and divided
  • 4 teaspoons fresh ginger, minced, divided
  • 1 tablespoon olive oil
  • 1 head radicchio
  • 1/2 cup green onion, chopped
  • 1/3 cup vegetable oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons sugar

Recipe

  • 1 toss together the scallops, half the garlic, 1 teaspoons of the ginger and olive oil in a large bowl.
  • 2 grill in a grill basket or on a grill rack over medium high heat 2-4 minutes on each side or until scallops are browned.
  • 3 arrange radicchio on individual salad plates; top with scallops.
  • 4 whisk remaining garlic, onions, vegetable oil, vinegar, remaining 3 tablespoons of ginger, and sugar in a small bowl; drizzle over the scallops.
  • 5 serve immediately.

wild rice soup v

Ingredients

  • Servings: 6
  • 1 cup uncooked wild rice
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1/4 cup all-purpose flour
  • 1 quart chicken broth
  • 2 large carrots, shredded
  • 3 cups cubed cooked ham
  • 1/2 cup milk
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup sweet

    Ready Time: 1 hr 30 mins

  • in a medium saucepan, boil rice in water 30 minutes. drain, rinse, and set aside.
  • meanwhile, in a large soup pot, melt butter over medium heat. cook onion in butter until translucent. stir in flour all at once to form a roux. stir in broth, a little at a time, and cook until slightly thickened. stir in carrots, ham, milk, parsley and reserved rice. reduce heat and simmer 15 minutes.
  • stir in and simmer 30 minutes more. serve.

Sixty Minute Bread Rolls

Total Time: 1 hr Preparation Time: 48 mins Cook Time: 12 mins

Ingredients

  • 1 cup milk
  • 1/2 cup water
  • 1/4 cup butter
  • 4 -5 cups flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 2 (1/4 ounce) packages active dry yeast

Recipe

  • 1 combine milk, water and butter in small bowl and warm in microwave (low setting) until liquids are very warm (120-130 degrees)--butter does not need to completely melt.
  • 2 place 3 1/2 cups flour, sugar, salt and yeast in the mixer bowl. attach bowl to stand and connect dough hook. turn to speed 2 and box 30 seconds. gradually add warm liquids to flour mixture, about 30 seconds. mix 1 minute longer.
  • 3 continuing on speed 2, add remaining flour, 1/2 c at a time, until dough clings to hook and cleans sides of bowl, about 5 minutes. knead on speed 2 for 3 to 5 minutes longer.
  • 4 placed in a greased bowl, turning to grease top. cover; let rise in warm place, free from draft, 15 minutes.
  • 5 turn dough onto floured board (i don't do this, as i simply begin to pinch the rolls from the dough, i just spray my hands with butter pam). shape as desired and place in well greased or butter flavored spray pan. see variations below. cover; let rise in slightly warm (90 degrees) for 15 minutes. bake at 425 degrees for 12 minutes or until done. remove from pans and cool on wire rack (mine never make it here -- we always are ready to eat as soon as they come out of the oven!).
  • 6 i have made different variations of this recipe by using chicken stock instead of the water, adding fresh chives to the recipe, etc. you can make it your own with your preferences. however, i will tell you, my husband says you can't beat the original recipe--he is right, of course.
  • 7 variations: cloverleaf: divide dough into 24 equal pieces -- form each into a ball and place in a greased muffin pan. with scissors, cut each ball in half, then quarters.
  • 8 i simply divide dough into 20 uniform balls keeping them shaped smooth and uniform and place in greased 9x13 pan.
  • 9 curlicues: divide dough in half and roll each to a 12x9 inch rectangle. cut 12 equal strips about 1 inch wide. roll each strip tightly to form a coil, tucking ends underneath. place on greased baking sheets about 2 inches apart.

dromskinka (dream ham)

Ingredients

  • Servings: 5
  • 12 (1/4 inch thick) ham slices
  • 1 cup wine
  • 3/4 cup heavy cream
  • 1 teaspoon curry powder
  • 1/4 cup tomato puree
  • 1 tablespoon butter

Recipe

    Cook Time: 45 mins Ready Time: 45 mins

  • place the ham slices in a shallow baking dish, and pour wine over them. marinate overnight in the refrigerator.
  • preheat the oven to 425 degrees f (220 degrees c).
  • pour off the wine from the ham into a medium bowl. roll up each slice of ham lengthwise, and place side by side in the baking dish. mix the cream, curry powder, and tomato puree into the wine. pour over the ham, making sure to get all of the slices covered. dot the top with small pieces of butter.
  • bake uncovered for 45 minutes in the preheated oven, or until the ham begins to brown on top.
