Ingredients

- 3 lbs yellow squash, sliced
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 3/4 cup saltine crumbs or 3/4 cup cracker meal
- 1 teaspoon salt
Recipe
- 1 cook squash covered in a small amount of boiling water 10 to 15 minutes or until tender.
- 2 drain well and lightly mash.
- 3 set aside.
- 4 saute onion in butter until tender.
- 5 add onion, eggs, cracker crumbs, salt and pepper to squash.
- 6 stir well.
- 7 spoon mixture into a lightly greased 2 quart casserole.
- 8 bake uncovered @ 350 for 20 minutes, or until lightly browned.
